Nirupama Chintamani
Ingredients
- 2 granny smith apples, peeled and cut into ½ inch cubes
- ½ cup apple cider vinegar
- ½ cup water
- ½ cup brown sugar
- A pinch of crushed red pepper
- 1 tsp Prana Kitchens Chukku KashAya
- Salt to taste
Directions
In a saucepan, add all the ingredients together and mix well.
- Place the saucepan on the stove and bring it to a boil. Cover and simmer with the lid on for 5-7 minutes, stirring periodically.
- Take the lid off and continue to cook the chutney until the liquid reduces, around another 5-7 minutes. Use a spoon to check the doneness of the chutney—if you are able to mash the apple cubes, the chutney is ready.
- Turn the stove off and let the chutney cool slightly before mashing the apple pieces roughly with a potato masher.
- Let it cool completely before storing it in an airtight container; the chutney will thicken as it cools. Enjoy as a spread on crackers, in sandwiches, or just by itself!
