Ingredients

2 tsp Prana Kitchen Ellu Podi
- 2 tsp olive oil
- 1 small avocado
- ¼ jalapeño pepper, minced (use less or more per your spice preference)
- A squeeze of lime or lemon juice
- A few sprigs of cilantro, chopped
- 1 slice of sourdough or french bread
- 1 egg
- 1 tsp butter or oil (to fry the egg)
- Salt

Directions
Prepare the Ellu Podi sauce: In a small bowl, combine the Prana Kitchens Ellu Podi and 2 teaspoons olive oil. Mix well and set aside.
- Prepare the avocado: Cut the avocado in half, remove the pit, and scoop the avocado into a bowl. Use a fork to mash it roughly (or completely, if you prefer a smoother texture). Add a pinch of salt, minced jalapeño, a squeeze of lime or lemon juice, and cilantro. Mix well and set aside.
- Fry the egg: Add 1 teaspoon butter or oil to a pan on the stovetop, over medium heat. Crack an egg into it, season with a pinch of salt and pepper, and place a lid on the pan. This will allow the egg white to cook while keeping the yolk intact. After about a minute or two, turn off the stove.
Assemble the avocado toast: Toast the bread. Place the toast on a plate, spoon on the mashed avocado, and carefully top with the fried egg, using a spatula. Finally, generously drizzle with the Ellu Podi sauce, and enjoy!
