Ingredients
- 1 15oz block of extra firm tofu, drained, pressed, and diced
- 1 medium onion, diced
- 1-2 red bell peppers (about 1½ cup), diced
- 2-4 garlic cloves, minced
- ¾ inch ginger, minced
- 1 tbsp tomato paste
- 3 tsp olive oil
- 1 ½ tsp Prana Kitchen Coconut Curry Masala
- Salt

- Crushed red pepper
- Garnishes: cilantro, lemon juice
Directions
Heat 3 teaspoons of oil in a large saucepan. Add the diced onion and sauté for 3-4 minutes over a medium flame. Add minced ginger, garlic, and crushed red pepper (to taste) and continue to cook for 2-3 minutes more.
- Then add the tomato paste and cook for a few minutes. Add the bell pepper, salt, black pepper. Add the Coconut Curry Masala and mix everything well. Continue to cook over a medium high flame for about 5-7 minutes, stirring from time to time.
- Add diced tofu to the pan and mix well to release any bits stuck to the pan. Cook for 5-7 minutes, until the tofu has absorbed all the flavors and looks colorful and a little charred.
- Take the pan off the stove, and finish with cilantro and lemon juice. Serve with rice or enjoy by itself.
