Ingredients
- 2 cups boiled potatoes cubed
- ½ cup cut red peppers
- ½ cup cut green peppers
- 1 tbsp Prana Kitchens Coconut Curry Masala
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- ¼ tsp asafoetida

Directions
In a small pan, add mustard seeds to hot oil. When it pops, add cumin seeds, turmeric, & asafoetida.
In a cast-iron skillet, roast peppers until they are crispy brown. Add the cubed potatoes and saute for 5 minutes
Add seasoning and Prana Kitchens Coconut Curry Masala. Mix well and remove from heat.
Cook on low heat for 5-7 mts for crispy & roasted potatoes.
Recipe Note
Boiled potatoes should be firm. Pairs well with Prana Kitchens Vathal Kuzhambu, Mysore Rasam & Tridoshic Red Rice Kichadi
