Millet Kichadi is a nourishing, gluten-free version of the classic Indian dish, made with wholesome millets, lentils, and healing spices like cumin and turmeric. Ingredients

½ cup millet and split mung beans mix

2 cups of water

1.5 tsp Prana Kitchens signature Kichadi Spice

⅓ cup of oat milk
-
Salt to taste

1 tbsp oil or ghee
-
1 tsp mustard seeds
-
5-6 curry leaves
-
5-10 split cashews (optional)
Seasoning:
Directions
Wash and rinse the millet and split mung beans.
For best results, soak the millet and mung beans mix in water for 4-6 hours after rinsing. Discard this water prior to cooking.
Add the mixture, water, and salt to an instant pot (see step 5)
Pressure cook on normal for 8 minutes, then let the pressure release naturally.
If using a stovetop, cook the mix on medium heat for 15 minutes. Cook covered on low heat for an additional 12-15 minutes until the mix is soft.
In a separate pan, heat oil or ghee, add mustard seeds until they splutter, then add Prana Kitchens Kicahdi Spice and curry leaves. Saute for 20-30 seconds, then remove from heat.
Add oat milk and the seasoning to the cooked millet and mung beans. Mix well.
Serve with Prana Kichens Amalaki Pacchadi, coconut chutney, or your favorite raita
Recipe Note
For richer kichadi, roast cashews in ghee and mix in with the seasoning.
