- Boiled medium potatoes - 4
- Heirloom tomato or any juicy variety - 1 large, chopped
- Grated ginger - a small piece
- Green chili - 1 (optional)
- Colored bell pepper - 1 cup, chopped
- Green peas - ¼ cup
- SRS turmeric powder - ¼ tsp
- Prana Kitchens Utsava Spice Blend - 1.5 tbsp
- Chopped cilantro - 2 tbsp
- Salt to taste
- Mustard seeds - ½ tsp

Black gram lentils or Udad dal (optional) - 1 tsp
- Asafoetida - ¼ tsp
- Curry leaves - 5
- Oil of your choice - 2 tbsp

Prepare the Seasonings:
- In a heavy-bottomed pan, heat the oil over medium heat. Add the mustard seeds and let them pop. Add the urad dal and sauté until golden. Then, add the asafoetida and curry leaves.
- Cook the Vegetables:
- Add the chopped bell pepper, green chili (if using), and grated ginger to the pan. Sauté for about 5 minutes until the vegetables start to soften.
- Add Spices and Tomatoes:
- Stir in the SRS turmeric powder, Prana Kitchens Utsava Spice Blend, green peas, and chopped tomatoes. Cook for about 7 minutes, allowing the tomatoes to soften and release their juices.
- Add Potatoes:
- Either grate or mash the boiled potatoes and add them to the pan. Mix well with the vegetable mixture.
- Simmer:
- Lower the heat and simmer the mixture for about 10 minutes, allowing the flavors to meld together.
