Ingredients
- 1 cup quinoa
- 1 medium onion, diced
- 1 cup bell peppers, diced
- 1 cup carrots, diced
- 1 cup corn
- 1 cup frozen green peas

1½ tsp Prana Kitchens Utsava spice
- 3 tsp oil
- Salt
- Pepper
- Crushed red pepper
- Garnishes: nuts, raisins, cilantro, lemon juice
Directions
Cook the quinoa: Rinse the quinoa with cold water and add it to a saucepan with 2 cups of water. Bring it to a boil, then cover the pan and simmer for about 10-12 minutes until all the water has evaporated and quinoa looks fluffy. (Alternatively, follow the cooking instructions listed on your quinoa packaging.)
- Cook the vegetables: Pour 3 teaspoons of oil into a pan over medium heat. Add the onion and soften for about 5 minutes. Add the peppers and carrots, and season with salt and Utsava spice. Mix well and cook for about 5-7 minutes. Add peas and corn and mix well. Add the cooked quinoa and season again with salt. Give everything a thorough stir. Cook for another 7-8 minutes.
- Finish the dish: Garnish with chopped walnuts (or other nuts of your choice), raisins, chopped cilantro, and a squeeze of lemon. Enjoy!
