This Quinoa Bowl with Yogurt Dressing is a healthy and tasty meal you can make in just 10-15 minutes. It’s filled with cooked quinoa, chickpeas, fresh veggies like cherry tomatoes, cucumber, red pepper, and avocado. Roasted pumpkin seeds add a nice crunch, and fresh herbs, salt, pepper, and lemon juice give it lots of flavor. Ingredients
- 1 cup cooked quinoa
- ½ cup cooked chickpeas
- ¼ cup diced cherry tomatoes
- ¼ cup diced cucumbers
- ¼ cup diced red peppers
- ¼ cup diced avocado
- 1 tablespoon roasted pumpkin seeds
- 1 tablespoon minced cilantro, parsley
- Salt
- Pepper
- Lemon juice
- ½ cup yogurt (whole milk or plant-based)
- ½ tsp Prana Kitchens Amalaki Pacchadi spice mix
- 1 small garlic clove, grated

- A pinch of crushed red pepper flakes
- ½ tsp olive oil
- 1-2 tsp minced parsley and cilantro
- 2-3 tsp water

Directions
Assemble the bowl:
Add 1 cup cooked quinoa to a medium bowl. Add chickpeas, cherry tomatoes, cucumber, red pepper and avocado to the bowl. Sprinkle salt, pepper and lemon juice. Garnish with cilantro, parsley and pumpkin seeds.
Make the yogurt dressing:
In a medium bowl combine yogurt, salt, pepper, crushed red pepper flakes and grated garlic. Then add Prana Kitchens Amalaki Pacchadi spice mix and whisk together. Add olive oil, cilantro and parsley. Add 1-2 tsp water and mix. Check for the consistency and add more water if needed.
- Add the yogurt dressing to the prepared quinoa bowl just before serving. Enjoy!
