This Roasted Carrots recipe elevates a simple vegetable with bold flavors and a touch of sweetness. Carrot sticks are seasoned with Prana Kitchens Pulingari Podi, maple syrup, olive oil, salt, and pepper, then roasted with fresh thyme sprigs until tender and caramelized. Ingredients
- 1 lb carrots, washed, peeled and cut into pieces (approximately 3-4 inches long and 0.25 inches wide)
- ½ teaspoon Prana Kitchens Pulingari Podi
- ½ teaspoon maple syrup
- 2 teaspoons olive oil
- ¼ teaspoon salt
- black pepper to taste
- a few sprigs of thyme
Directions
Preheat the oven to 425℉.
- Wash, peel, and cut the carrots making sure the cut pieces are fairly similar in size.
- In a large bowl, toss the carrot pieces with Prana Kitchens Pulingari Podi, salt, black pepper, maple syrup, and olive oil.
- Line a sheet pan with parchment paper and spray lightly with olive oil. Spread the carrot pieces in an even layer. Add a few thyme sprigs.
- Roast the carrots in the oven for about 20 minutes, turning the pieces gently half way through.
- Remove from the oven and enjoy warm!
