This Roasted Carrots recipe elevates a simple vegetable with bold flavors and a touch of sweetness. Carrot sticks are seasoned with Prana Kitchens Pulingari Podi, maple syrup, olive oil, salt, and pepper, then roasted with fresh thyme sprigs until tender and caramelized. Quick and flavorful, it's a perfect side dish for any meal.
Ingredients
- 1 lb carrots, washed, peeled and cut into pieces (approximately 3-4 inches long and 0.25 inches wide)

½ tablespoon Prana Kitchens Pulingari Podi
- ½ teaspoon maple syrup
- 2 teaspoons olive oil
- ¼ teaspoon salt
- black pepper to taste
- a few sprigs of thyme
Directions
Preheat the oven to 425℉.
- Wash, peel, and cut the carrots making sure the cut pieces are fairly similar in size.
- In a large bowl, toss the carrot pieces with Prana Kitchens Pulingari Podi, salt, black pepper, maple syrup, and olive oil.
- Line a sheet pan with parchment paper and spray lightly with olive oil. Spread the carrot pieces in an even layer. Add a few thyme sprigs.
- Roast the carrots in the oven for about 20 minutes, turning the pieces gently half way through.
- Remove from the oven and enjoy warm!
