Ingredients
- 2 cups whole wheat pastry flour
- 1 cup turbinado raw cane sugar
- ½ cup coconut oil or olive oil
- 1 cup vegan plant-based milk (oatmilk is a good choice)
- 1 tsp baking soda
- 2 tbsp apple cider vinegar
- 2 tsp Prana Kitchens Chai Masala
- ½ tsp salt
- 1 cup grated carrots
- ½ cup broken walnut pieces (any other broken nuts of your choice)
- SO Delicious Frozen Dairy Free Original CocoWhip (as frosting)
Directions
In a bowl, combine coconut oil, plant-based milk, and apple cider vinegar.
In a separate bowl, combine pastry flour, turbinado sugar, baking soda, salt, and Prana Kitchens Chai Masala.
Now pour the wet mix into the dry mix and stir slowly until they are well combined.
Preheat the oven to 350 F. Grease a baking pan and pour the batter in. Add carrots and walnuts. Bake for 45 minutes or until a toothpick inserted comes out clean.
When cool, top the cake with SO Delicious Frozen Dairy Free Original CocoWhip. Optionally, enjoy as is.
