Ingredients
- 2 tsp olive oil
- 2 cups baby spinach, chopped
- ½ cup frozen green peas
- 2 cloves garlic, minced
- 1 shallot, minced
- 1 pinch of crushed red pepper
- 1 tsp Prana Kitchens Samedha Mukhvas spice mix
- Salt

- 8 oz sharp cheddar cheese
Directions
Preheat the oven to 350º F.
- Make spinach and pea mixture: Add olive oil to a pan over medium heat. When it’s hot, add crushed red pepper, minced garlic and Samedha Mukhvas spice mix. Add minced shallot and sauté together for a few minutes. Add salt, mix well, and add green peas. Sauté for a minute or two. Add the spinach and mix well. Cook everything together until spinach looks just wilted; this will only take a few minutes. Turn the stove off and let the mixture cool.
- Make crostini: Using a serrated knife, cut the baguette into about ½-inch thick slices. Brush the bread with olive oil on both sides and spread the slices out on a sheet pan. Place the pan in the oven until the bread is lightly toasted, about 10-12 minutes. Take the crostini out of the oven and let them cool slightly.
- Assemble the crostini: Cut the cheddar cheese into slices about the same size as the crostini. Top each piece of bread with a slice of cheese, and add a spoonful of the spinach and pea mixture. Assemble all the crostini and enjoy!
