Ingredients
- 1 European cucumber, peeled and cut
- 1 Medium sized avocado, cut and sliced
- ¼ of a red onion, thinly sliced
- 1 tsp roasted pumpkin seeds
- 1-2 tsp minced cilantro and parsley

- Lemon juice
- ½ cup yogurt (whole milk or plant-based)
- ½ tsp Prana Kitchens Amalaki Pacchadi spice mix
- 1 small garlic clove, grated

- A pinch of crushed red pepper flakes
- ½ tsp olive oil
- 1-2 tsp minced parsley and cilantro
- 2-3 tsp water

Directions
Assemble the salad:
In a medium bowl, arrange the cucumber pieces, slices of avocado and red onion. Sprinkle salt and pepper, and squeeze the lemon juice. Add pumpkin seeds, cilantro and parsley.
Make the yogurt dressing:
In a medium bowl combine yogurt, salt, pepper, crushed red pepper flakes and grated garlic. Then add Prana Kitchens Amalaki Pacchadi spice mix and whisk together. Add olive oil, cilantro and parsley. Add 1-2 tsp water and mix. Check for the consistency and add more water if needed.
- Add the dressing to the salad just before serving. Enjoy!
