Ingredients
- 2 cups of boiled potatoes when mashed
- 1/2 cup chopped green bell pepper (or any color of your choice)
- 3 tbsp Prana Kitchens Utsava Spice Blend

¼ tsp SRS Turmeric
- Salt to taste
- Oil to season
- 1/2 lemon
- Chopped cilantro
- 1 packet vegan cheese (or regular cheese if you prefer that)

Uncooked whole wheat tortillas or fresh uncooked chapati
Directions
For the stuffing:
Boil potatoes, peel, then mash.
In a pan, heat up some oil.
Add the bell pepper, turmeric, Prana Kitchens’ Utsava Spice Blend, salt, and sauté it for 5 minutes.
When it becomes a bit translucent add the boiled potatoes. Mix it very well and keep for another 2 minutes.
Turn off the heat. Add lemon and chopped cilantro
Assembling and Baking the Rolls:
Preheat the oven for 400 degree fahrenheit.
Take an uncooked wheat tortilla.
- Add 2 tablespoons of the grated cheese and 2 tablespoons of the stuffing. Spread it onto the tortilla and roll it like you would for a soft burrito.
Repeat the rolling process. There should be enough for about 10 rolls.
Now place them on the tray and bake for about 10-15 minutes first depending on the kind of oven you are using.
Flip the rolls and bake for another 10-15 minutes until you have a golden brown crisp roll.
- The timings depend on the oven, so please make sure you check your rolls frequently.
- Remove the tray from the oven, and now you have crispy kathi rolls to enjoy!
