1 zucchini cubed
- 1 cup chopped cilantro tightly packed
- 1 tbsp Prana Kitchens Coconut Curry Masala
- 1 tbsp grated ginger
- 1 green chili slit lengthwise
- 1 tsp of tamarind paste (Laxmi Brand).
- 1 tbsp jaggery shavings or powder
- Salt to taste
- 1 tsp oil
- 1 tsp oil
- ¼ tsp Mustard seeds
- Pinch of asafoetida
- Some curry leaves (optional)

Directions
In a heavy bottomed pot, heat 1 tsp oil and saute zucchini cubes, ginger & green chili for about 5-7 mts until zucchini becomes soft.
- Remove from heat. Add Prana Kitchens Coconut Curry Masala, tamarind, jaggery and salt.
- Once cooled, blend this mixture with chopped cilantro to a smooth chutney. Add water a tbsp at a time if needed.
- Prepare seasoning by adding mustard seeds to hot oil. Once they splutter, remove from heat, add asafoetida & curry leaves.
Add seasoning to the prepared chutney.
- Serve as a side dish with Prana Kitchens Moringa Rice Adai, Dosa, Idli or enjoy as a spread on sandwiches.
