Ingredients
- 2 cups all purpose flour
- 1 tbsp baking powder
- ¾ tsp Prana Kitchens Chai Masala
- ¼ tsp salt
- 2 eggs
- ⅓ cup oil
- ½ cup whole milk
- 1 cup brown sugar
- 1 cup grated zucchini
- ¼ cup chopped walnuts
- ¼ cup raisins
- 1-2 tbsp of turbinado sugar for sprinkling on top of muffins before baking

Preheat oven to 400ºF. Line a 12-muffin tin with paper liners, and spray with olive oil.
- Prep the dry ingredients: In a medium bowl, whisk together the flour, baking powder, Prana Kitchens Chai Masala, and salt until just combined. Set aside.
- Prep the wet ingredients: In a large bowl, beat the eggs, then whisk in the oil and milk. Combine everything well and then add the brown sugar, zucchini, walnuts, and raisins, mixing well after adding each ingredient.
- Assemble the batter: Slowly add the dry ingredients to the wet ingredients in small batches, mixing batter gently after each addition. Do not overmix but make sure everything is well combined.
- Bake: Using a cookie scoop or tablespoon, spoon approximately two tablespoons of batter into each muffin liner, or until each liner is ¾ full. Sprinkle turbinado sugar on top of each muffin. Bake for 20-25 minutes, or until muffin tops are golden brown. After taking them out of the oven, cool on a wire rack and enjoy.
