Ingredients
- 2 beets, roasted (or steamed) and grated
- 3 medium sized potatoes, roasted (or steamed) and grated
- 1 tsp Prana Kitchens Utsava Spice Blend
- ⅓ cup breadcrumbs, plus extra for coating the fritters
- Salt

- ½ cup plain whole milk greek yogurt
- ½ tsp Prana Kitchens Amalaki Pacchadi Spice

For the fritters:

Directions
Make the beet mixture: Combine beets and potatoes, and season with salt, pepper, and Prana Kitchens Utsava Spice Blend. Mix well, and incorporate ⅓ cup breadcrumbs.
- Form the fritters: Preheat the oven to 350℉. Line a baking sheet with parchment paper and grease it with olive oil. Using a scoop or tablespoon (to ensure even sizing), form patties from the beet-potato mixture and lightly roll each patty in breadcrumbs before placing it on the prepared baking sheet.
- Bake the fritters: Brush each fritter with olive oil before placing the baking sheet in the oven for around 40 minutes, gently flipping the fritters halfway through.
- Make the yogurt dip: Add all the dip ingredients together and mix well.
